PeeWee's response describes how to get a page number in the header or footer. To get the first page of the document to be numbered 3:
1. Click in the first paragraph of the document.
2. Go to Format > Paragraph > Text flow.
3. In the "Breaks" section, tick "Insert", select "Page" type and position "Before", tick "With Page Style", and set "Page number" to 3.

You should now have the first page numbered 3, the second page numbered 4, and so on.

Or did you want the first two pages to have no number in the header/footer, but then show the numbers from page 3 onwards?

I think the query "Does your advice still apply for me?" was referring to Tom's response about save format? Yes, that applies to using LibreOffice on any OS. It's best to save in the ODF formats, and if you need to share the document with someone who uses MS Office save a copy in that format (.doc is more reliable than .docx) for them - but keep your original in ODF. If they only need to read and not modify the file, it's sometime better to export as PDF.
