How can I tell LO spreadsheet that in this particular cell, I want
to write "January 2014" and that's what I want it to say- don't change it
to date format, just leave that text.

Simplest: format the cell as Text *before* entering the data.

Alternatively, either
(1) precede the required text by an apostrophe (plain, not smart), to prevent the automatic detection of a date, or else
(2) enter ="January 2014".

You could set the cell format to text.
