Is there a way to shut off the Start Center? I know it’s a new “feature” but I really don’t like it and would prefer to simply click file-open to access files.

Using LO 5.1.5.2 on Mac Sierra

You can simply open only the component you want (Writer, Calc, etc.) from
the menu, a desktop icon or a desktop tray icon.

Or, if the list of previously open files in start center is unwanted those
can turned off here:
Tools > Options > LO > Advanced :: Expert Configuration | Set PickListSize
to Zero
